It’s tomato season here in New Jersey, and we’re always on the lookout for new ways to honor these homegrown treasures.

Admission, collected at the door, is per persion, children younger than 10 are admitted free. Other courses include: a shot of Ramapo tomato soup with black garlic popcorn and aged balsamic vinegar; a tasting of heirloom tomatoes, grown specially for the restaurant and served with house-made mozzarella; and the piéce de resistance — candied tomatoes (they’re a fruit, after all) bruléed, sprinkled with a little salt and black pepper, with lemon basil ice cream spooned over the blistered crust.
